To prepare
smoked cheese, we will need:
—Hard
cheese – about 600 g;
—Alder wood
chips for smoking – 100 g;
—Hot
smoking smokehouse.
Soak 100 g
of wood chips in warm water. Give her time to soak up moisture. It will take
about 15-30 minutes.
At this
time, prepare the cheese. Cut it into pieces of about 5*5 cm. Wrap each piece
in a linen napkin or paper towel. Tie it evenly on the smoking tiers so that
the product does not come into contact with each other.
Now evenly
distribute the soaked wood chips to the bottom of the smokehouse. Cover with a
fat collection tray.
We light
the fire and wait for a temperature of 70-80 degrees inside the smokehouse. Now
open the lid and put one or two tiers for smoking, depending on the amount of
the desired product.
At this
temperature, we smoke for about 2 minutes. Next, let it brew for 10-15 minutes
and take the cheese out of the smokehouse.
Overnight,
leave the cheese in an airtight package in the refrigerator. During this time,
the product will cool down and become saturated with the aromas of smoking.
